My husband will be glad that he missed out on this for lunch because this is not lunch food in his eyes. But when I looked in the fridge to see what I should make myself for lunch today, a baked sweet potato waved at me.
Ahhh…I knew what was for lunch.
Fried sweet potatoes.
This is an “Easy Eating” food because there is no recipe. Recipes are for cake, not everyday lunch food. But I still like to shake things up a bit and venture beyond the limited menu that I can get stuck on when it comes time to make lunch. Easy Eating is about being sparked by a yummy idea and then heading off to make it. Simple.
So, my sweet tator lovin’ BFF’s, spray a fry pan with nonstick spray, heat it up to medium, put in an already baked sweet potato (if you are not at this point, go buy one, bake it and put it in the fridge for the next day – then start cookin’) and mash it up. Dollop on a bit of butter, sprinkle in a spoonful of brown sugar and some garlic powder, salt and pepper. Stir it around and flip it periodically until the sweet potato is warmed up and the brown sugar and butter has made a nice crispiness in places. Turn the heat down if necessary because brown sugar can burn.
Add it to your lunchtime plate with some apple slices or add a bun-less hamburger or chicken with BBQ sauce for dinner. The only thing that would make it better are some bright green sweet peas!
